Whenever you skin any animal in DayZ your character's hand will become bloody and eating or drinking with that hand causes food poisoning. To avoid this, make sure you wash your hands before you eat something. Apart from that, you can wear gloves while you cutting animals and remove them after you are done. This way your hands stay clean.

If you have blood on your hands, do not consume anything or you will get sick. You can get blood on your hands by cutting up animals (or humans). There is no other way to get blood on your hands. You can, however, still safely drink from containers with blood on your hands. But you cannot eat from containers with blood on your hands.

The way you contract salmonella is from eating raw meat and fat, drinking/eating with unclean hands and eating rotten food. If you have a high enough immune system (above 90% on food and water), you can drink and eat as much raw meat and pond water you want.
